Gelatin
Gelatin is a protein produced by partial hydrolysis of collagen extracted from the skin, bones, and connective tissues of animals. In Western supermarkets, standard confectionery gelatin is predominantly porcine (pig-derived).
Carmine (Cochineal / E120)
Carmine is a bright crimson-red pigment obtained by crushing and boiling female cochineal insects that live on cacti in South America and the Canary Islands.
Rennet (Animal vs Microbial)
Rennet contains chymosin, a coagulating enzyme used to curdle milk into cheese curds and whey. Animal rennet is harvested from the fourth stomach of slaughtered unweaned calves.
Whey Protein
Whey is the liquid remaining after milk has been curdled and strained during cheese manufacturing. It is spray-dried into Whey Protein Concentrate (WPC) or Whey Protein Isolate (WPI).
Vanilla Extract & Alcohol Solvents
Traditional pure vanilla extract is legally required by US FDA and European food laws to contain a minimum of 35% alcohol to extract vanillin flavour from cured vanilla pods.
Mono- and Di-glycerides (E471)
E471 is an emulsifier synthesized from glycerol and fatty acids that prevents fat and water from separating in baked bread, margarine, and ice cream.
Shellac (Confectioner’s Glaze / E904)
Shellac is a natural resin harvested from tree branches where female lac bugs deposit protective secretions. It provides a glossy, moisture-resistant protective shine.
L-Cysteine (E920)
L-Cysteine is an amino acid used by commercial bakeries to soften gluten chains and accelerate industrial dough kneading for baguettes, hamburger buns, and tortillas.
Pork Lard (Saindoux)
Lard is pig fat historically prized in traditional pastry and baking for producing flaky textures in pie crusts, biscuits, and frying oils.
Soy Lecithin (E322)
Lecithin is a natural fatty substance composed of phospholipids extracted mechanically and chemically from crude soybean or sunflower oil.
Pectin (E440)
Pectin is a structural heteropolysaccharide contained in the primary cell walls of terrestrial plants. It forms a firm gel when heated with sugar and acid.
